Cucumber Bell Pepper Salsa

Balanced Bites

Ingredients

  • 1 cucumber, chopped into 1/4" cubes
  • 2 bell peppers, chopped into 1/4" cubes
  • 4 tbsp of fresh cilantro, finely chopped
  • 2 cloves of garlic, finely chopped or pressed
  • juice of 2 limes
  • 1 tbsp extra virgin olive oil
  • sea salt & pepper to taste

Method

Toss ingredients in a bowl and let stand for ten minutes before serving.
